how much replacement air is required for 1 fan this size

Typically a 1 for 1 air replacement is desired, but this will also depend on the overall size (cubic feet) of your building.
how long for shipping to iowa this time of year?

This fan ships in roughly 7 to 10 business days from order date, then 1 to 2 days in transit to Iowa.
How many decibels is this fan while running full speed?

Unfortunately, the manufacturer does not test their fans for sound levels currently.
The shop is 30x60 26 feet high, will this fan work with size and move any air?

With this one fan you can expect and air change in your building of around 10 times per hour, or once every 6 minutes or so.
What motor is used? Or, what can I replace it with? I have this one and it's not working anymore.

We do offer the motor for this fan. The part number is VR12AB-P. You will need to call this order into 866.727.1060 since we do not currently offer this online.

No. The shutter / damper on this fan is gravity and non-motorized.

This exhaust fan, like most fans, has an ambient temperature rating of 104 degrees F.
can it be used with variable speed

This fan is a 1 speed fan. It is not designed for variable speed.
how is this fan mounted to a corrugated steel wall.

This is a question for your contractor, but what we usually hear about mounting of these cabinet type fans in corregated walls, is that a shelf of sorts is created at the opening in order for the fan to be fastened to.
