Can this unit be hard wired and run on a variable speed switch

You would have to cut off the plug in order to hardwire this fan, which will void all warranties. This is a 2 speed fan with the 2 speed switch built-in (not variable speed).
How much square footage will this fan cover?

Typically the coverage area for an exhaust fan is rated by cubic feet. This fan will produce roughly 3300 cubic feet (L x H x W of the room) of air movement per minute based on minimal static Pressure.
I can run duct to this correct?
